Alex, I shy away from the older wood slat grills. But I know Josh and steve have done great work with them. @Jon Tofte is another one who does amazing things with the wood slat grills. And yes several others on this site as well. I am not sure which stain many use. Some use teak oil and other types of finishes. If you want to use a regular wood stain to accent the grain of the wood, then a good top coat of a Spar Urethane works good as it is generally used by boat builders and therefor great for outdoor items such as grills.
 
I would think among Josh, Steve and Jon you sold have all the insight you could want. I think they mostly use the same products.

This got me thinking, scary I know. Marine grade wood, is that just plywood? Or are there other marine grade woods?

Look up Ipe Ironwood "Brazilian Walnut" if you want the most weatherproof resilient longest lasting marine grade wood. This is the stuff. It's hard as a rock and feels as heavy as Steel and last virtually forever. It is not cheap though. People use it to build high-end decks for their homes and sometimes they put their leftovers up for sale on Marketplace which is where I get it from.Screenshot_20250519_200447_Photos~2.jpg
Here's one of the pieces from the load I picked up recently. Just wiped down with water.

You need to get carbide tipped blades to cut it. Regular blades will wear out very quickly.
 
As far as staining cedar it just depends what look you're going for.

I have never tried to match the original stain from Weber but if I was to try to match original this is one I would try. Old school Thompson's water seal Sedona red

There really isn't a wrong answer on staining the wood. I use gel stain because I think you end up with a more even finish followed by a couple coats of spar urethane.
