Didn't have much time last night to do real smoking, so I did one of my favorites.

Done in 1 hour. No brine, marinades or lengthy pre-seasoning. Just rub and go.
Moist, juicy meat and crispy skin. :)

Now that's a great looking bird! I have one of those turkey cannons. I am going to have to dig it out and start using it again.
