Full Size Brisket On An 18" WSM


 
Just do it! You will fret and worry about the first one but, after that it’s easier. My first one I annoyed several folks from the forum hour by hour. The second, only bothered one person twice, thanks, Dustin! Now, I’ve gone pretty basic with them, salt and cracked black pepper, full to overflowing charcoal ring, plenty of interspersed cherry for smoke, sidewinder minion method, light it about ten or eleven, go to bed, check the remote whenever I wake up. Get up, make coffee, check the monitor, maybe shake things down, add coal if necessary, have breakfast, and just wait for 203*.
Lift, rest, slice, enjoy!
 
How 'bout a chuck roast for practice? :o

Rather like testing a canoe when you want to buy a cigarette boat.
Smoking a chuck roast is wonderful but, it’s a far cry from doing a brisket.
As TonyUK said to me when I was waffling on doing one:
“Just put on your big boy pants and get to it!”
A brisket will run you fifty some bucks tops (Sam’s Or Costco) you’ve already got the coal and smoke wood.
I’m not trying to shame you into doing something but, there comes a time to sink or swim. You’ve been around here long enough to know that. Do it for a bunch of buddies and have them bring everything else! The cost of the sides and beverages will offset the brisket, do a full packer, feed ten and take the praise!
Have someone do a big vat of baked beans, roasted parmesan broccoli, bourbon, scotch, IPA’s, chocolate cake, peanut butter cookies, brandy, cigars if you so desire. (I’ll pass)

Yep.

It's really not that much meat.
After it's cooked.
The last brisket I cook my wife and I ate 75% of it in a few days. Then I froze the rest. And ate it over the next two weeks.

$60 meat gone like that with only two people.
