Flank Steak & $4.00 Spare Ribs

Cooked at 250 over Apple. Cooked flank steak 1 1/2 hours. Cooked Ribs 5 1/2 hours. Did 3 2 1 to get fall off the bone tender

Your ribs look great! Its your hour and a half flank steak that has me wondering.
Did you find any advantage to doing it low and slow vs. hot and fast like most normal
steaks are done. Reason I ask is I did a chuckeye low and slow a while back and thought
it was a very good way to do one.
