OH yeah......yellowtail collars cooked on the gasser.

The Yellowtail Collars were the bomb, the ribs not as good as expected.

Butcher went to the back room to get my ribs...and wrapped them in white paper before i
got to see them.

Get a Butcher you trust.

I think that is the hunk of meat just behind the gill plates on a yellow tail snapper. If I am wrong I apologize. Either way they look delicious and so do your ribs

I once tried yellowtail collars at a Japanese restaurant, and it was out of this world. The fish was very moist and clean tasting. Your collars look awesome, Jeff.
 
The Yellowtail collar (like on all fish) refers simply to the section just behind the head and gills. "best part of the fish,
It's called Hamachi Karma at Sushi Restaurants.

This is a Yellowtail i caught at Catalina Island.

We always called them "throats" growing up.....but to be worth the effort, need bigger fish, like yours......those look really good.......................d
 
Ya i like to fish fresh/salt water doesn't matter set the hook and cook some dinner.

Veri-Teri teriyaki sauce for the soak on the Yellowtail collars and slight sprinkle of Kosher salt before
it hit the pallet.
