Fishing Trip in Charleston SC = Red, Sheephead, Trout, and Fresh Shrimp

No Weber involved, but the variety of fresh seafood and cooking methods is worth sharing with you passionate folks. It wasn't our fault though...rental house, and used what was available.

Spent the weekend with a whole crew of college buddies in Charleston, SC for a bachelor party...and that's all I can share about that :) Went fishing off Shem Creek and Folly Island for Redfish. Our boat was the only one out of 4 to bring home dinner. We brought home 2 reds and 2 trout with about 3lb of fresh shrimp as well. We bought a large Sheephead at the local market to feed 16 people.

Freshest shrimp possible. In the water 2 hours before.

Did some sushi with the trout.

Stuffed trout with butter, lemon, rosemary and onion.

Did couple hobo packs of potatoes, threw the trout on and two Redfish filets skin down. Pan fried 2 filets too.

Did the Sheephead in a salt bake, buried under 3 boxes of mortons salt with seasonings inside.

That is a fisherman's feast if I ever saw one! Everything looks so good. Intrigued with the Sheephead.

The sheephead was in the seafood section of Harris Teeter. I don't know anything about the fish, but it was definitely not a flaky white fish like the others. It was much more substantial than the trout or red and came out beautifully tender, but a little more grainy (if that makes sense for a fish).
 
Everything looks great, but this one is amazing

Thank you. This was the pan seared red filets. My buddy poached them in oil low and slow on skin side only. That color up top is just from hot oil being scooped and dumped on top, and the skin was super crunchy and delicious.
