First Try at Brisket

Title might be slightly mis-leading. It is a small 2.5 lb flat (not a full brisket) I saw in case at Whole Foods last night whilst scoping out some ribs.
Rubbed and let sit overnight, and went on the SMOKENATOR at noon.
Plan on approx. 3 hours, then into foil with some carmelized sweet onion and beef stock for about an hour to 1+1/2, then finish off on hot grill.
Will post results and pictures after dinner tonight.

I was very pleased with the way this turned out. Of course as it was first attempt I have no comparison.
But I guess the fact that I would have eaten another 2 or 3 more platefuls says something!

Anyone want to takes bets if Bill will be repeating this cook, often... ;)

I must confess that I have never done a brisket. With only me and my wife, a full brisket doesn't make much sense. However, Bill's small flat looks VERY nice. I have seen some flats at Costco that look worth doing, too. Guess I'll have to give them a try. I'll give a report and see if I can match Bill's excellent looking results.
