First Time Meatloaf

Hey everyone,

As I'm trying to find new things to cook on my WSM-22, I figured I'd give meatloaf a shot. Used the recipe found right here on VWB, except substituted bread crumbs for the saltine crackers.

Used the whole chimney of lit KBB, followed up wtih 3/4 chimney of unlit. When the were all mostly gray, assembled the cooker, added 3 small chunks of pecan (tried to use a mild wood per the recommendations), and added the loaf. Cooked around 350 for approx 90'. At 105 temp, diamond scored the meatloaf, and slathered it in Sweet Baby Rays sauce. Took it off at 162 temp, tented it for 10 minutes, and got this beautiful thing --



Then, for the moment of truth, show me that smoke ring!!

Success! Meatloaf was quite good, and my better half was quite pleased!

Yum..I gotta give this a whirl too..I've done mini loafs of turkey burger but not any beef and not a typical meat loaf..

Looks tasty!!
 
I love meatloaf. I have used that recipe many times. Once, inspired by someone else on this board, I used cheez itz. very good. try it. yours does look great man.
 
That sir is a great looking meatloaf! We do ours on the gasser or performer but never have smoked one. Going to try that on the mini next time.
 
Beautiful loaf Chris. I like the way it sliced without crumbling. Nothing better than cold meat loaf sandwiches.
