First Time Chuck Roll

So I was looking for something new to try, and figured why not give chuck roll a spin! I joined KCBS pretty much for the ability to go to the local Restaurant Depot here in Pittsburgh. Boy was I not disappointed. All sorts of meats at pretty damn good prices. I've never been able to find chuck roll anywhere else so I picked one up. 26 damn lbs!!!



I trimmed, rubbed with olive oil, then used Meatheads Big Bad Beef Rub and threw her on the WSM. Tied it with some butchers twine because she was unwieldy.



Started at 730pm last night, and made it all the way to 130pm before I had to add more fuel. Had to foil it around 230 because I didn't think it would be done in time for dinner. I think I was correct. Hit 200 around 515pm today, so it took just about 22 hrs. Rested for an hour (had to run and get more vacuum freezer bags!!) and then pulled.





This tasted fantastic! Added a little rub to it to add some flavor, and we have PLENTY of leftovers!
