Grabbed some beef back ribs the other day at a fair price. These are obviously NOT short ribs, and its apparent in size/cost/flavor. Figured it would be something new, and I found a couple posts from guys on here that led me in the right direction.
I seasoned with just salt and pepper, and did them little hotter than I do pork. I had them indirect on the kettle at 300* for 3 hours with no foil and 1 hour in foil. I took them a little further than I should have but we live and learn. They're pretty fatty, and I will trim them in my second attempt, but they were tasty. My boys liked them the most, and that's my only rating system
. We're all our own worst critics, right?
My oldest is a GREAT eater. What kid eats his salad BEFORE his croutons? Clean bones are a 4-star review.
Finally, Daddy gets to sit and eat.
