First ribs in a while

It's been too long since I've posted pics. Between winter, moving (twice), and change of jobs, I haven't had much time. I've looked at a bunch of Q pics the last few months, so thanks guys and gals.

Ribs, after two hours or so. The thing in the middle is a duck breast, which is GREAT smoked.

Plated with my wife's coleslaw at the end and a nice cold one. It's gonna be a great summer.

I know you're in canada, but I didn't know you use beavers to cut your ribs!

Cut me some slack, man...I've got to work off the rust. I overcooked the ribs so they were more fall off the bone, and I was super hungry (as were my guests) so knife skills took a back seat. In the end, they were polished off by everyone.

Oh, and the duck breast was great. Just applied my rub and smoked it, rotating skin side up and down. A great little snack.

It's so great to be back on the WSM.

I figured as much. My first cooks in the spring are usually a bit under or over done too. You lose your feel during the winter. But then again, there's nothing like a good beaver joke, eh?
 
Just a good reason to make more use of the WSM, to get back on top of my game.

Beaver jokes....this could get interesting.
