Last week I stumbled across a rack of spares from Kroger Signature for $6.90, grabbed em and came home. This is my first ever rack of spares and second cook using charcoal (first cook was the week prior (Chicken, husked corn, burgers). My rub consisted of kosher salt, fine black pepper, paprika, with a dash of cinnamon. Forgot to take a pic before I laid them on the grill, but here they are just after they're laid down.
Hickory:
2-1/2 hours in and freshly sprayed with apple juice:
3:15 in, ready to be wrapped:
Wrapped them in HD foil with brown sugar, rub, apple juice spray, parkay
5:15 in and just out of the foil, headed back out to the grill to set the sauce and finish them off:
The Sauce was a doctored Lillie's Q Barbeque Sauce "Smoky". Added rub and a splash of apple juice. LILLIE'S Q BARBEQUE SAUCE - SMOKY
5:45 in, pulled back nicely and set. Now for 30 minutes of rest time and then time to eat:
Leftovers (bark that fell off one of the ribs on the right):
The spares were untrimmed when I got them (full spares) and I did a poor job of trimming them down to St. Louis. Also, I think I had a touch too much Hickory on there. And they may have needed another 30-60 mins. So yeah...I didn't cut them right, over smoked and under cooked...but they tasted great! The boys and I did a number on those ribs.
