First go at Ribs on my WSM

Been smoking smaller things like meatloaf’s, tenderloins and chicken but today I cooked up my first batch of ribs with it and we were very happy with the results. Not competition grade I am sure but meaty, juicy and very tasty.

For the most part these were done per Myron Mixon’s book but I am not into all the pans so maybe a little Harry Woo mixed in too. I wanted to look at Myrons recipes and Harry’s because I want to cook a little faster with the higher 275º temps. I think Myron’s book is wrong on the cooking time at 275º of 3-2-1. I used Harry Woo’ s 3-1/2 hour and they were perfect. I went 2 with 1 hour in the foil and 30 minutes back on without the foil. 1 hour is just about right for us for falling off the bone.

First cook today without the water as well and might be my MO now. Thanks

looks real good... my ribs didn't come out that moist last week :( I cooked them at a pretty consistent 230 for 6 hrs... I didn't foil or anything... I never opened the kettle once... I don't know if foiling would have made the difference... Any ideas?
 
Thanks guys, for those of you cooking on a WSM do you normally leave your rack full size or cut in two for the cook?
