First Day Spare Ribs

more snow to start the new year... and this ▼ was AFTER I shoveled 5 inches...
with more coming down as I type. whatever.

anyway, seasoned up a rack of spares with Pig Salt's SW BBQ RUB
tossed those on the WSM about 11 am

last night, we got our breakfast ready to cook this morning, a Mexican Breakfast Casserole...
and while I was getting the ribs ready, liz tossed in the oven our New Year's Day Breakfast
Here's a slice for you, if you like.

now back to the ribs... after a number of hours (4½), I decided to apply a little sauce...
I used a little Maull's and a little Rufus Teague, both very good together...

yeah... left those on the WSM for another 45 minutes or so...
then brought them inside to slice them up

then served with more broccoli and a Diet Coke with Lime. oh, & more sauce on the side.

used paper plates for this brief dinner (seems I've been washing dishes all day).

Very Good Ribs... ya know, I could eet ribs everyday. Really.

Sorry about all that snow. I hope we don't get any more snow the rest of winter, I've had to shovel twice so far - ONCE was enough for me. :)

Great looking ribs Jim!! I'm expecting 12"-18" over the next 36 hours, so going to have to dig out the grill area again. Happy New Year!!!!
 
The ribs look outstanding. Will have to try the breakfast casserole. Maybe even for dinner sometime.
 
Surprised they weren't dried out after that long whether at 225 or 250 my ribs are always perfect after 4 hours they look great though
 
Happy New Year Jim. This place would shut down for a month if they saw that much snow. There'd definitely be no milk or bread on the store shelves. Fortunately, I don't even own a snow shovel or blower.

I did have one of the folks that I work with pick me up a bottle of Maull's from St L while visiting family for the holidaze. I have plans for using it on some pork steaks.

Spares 5 hrs at that temp won't 'dry them out' I wouldn't think.
