I love hockey - even with the post season lasting an eternity. Being a transplanted Chicagoan, we'll keep the complaining down, at least for the next couple of days, as the Hawks containing on their quest. It was also the first weekend of summer - With game 6 on Saturday, I thought a good way to kick off the summer would be with some baby backs and the game.
Started out with a couple of nice slabs - whipped up some rub, consisting of dried Chile de Arbol, Guajillo, Ancho and Morita peppers, black pepper, garlic, onion, a little celery salt, and dash of cumin. no salt.
Threw the ribs on, and got busy on the sauce. We make a spicy sweet sauce. Nothing too fancy, we spice with the same chilies as the rub, and use coconut sugar for sweetener
It was the first weekend of summer, so I thought I'd bust out the tripod and do some beans. We had done a belly the previous week, so I had some nice trimmings to toss in.
I like to let the beans cook for about 5 hours, so they need to start out a little soupy. I looked for a Rolling Rock, but I didn't have any in stock - So went with the house beer.
These guys are just about there - With little time to spare, (yuk, yuk) as the game was about to start....
I've been slacking with the plated shots of late- So here's 2 - Some bones, the beans, and Doris' Parker House rolls. Hawks win! Happy Solstice everyone!
