First Cook, Weber Expandable Rack/Brined Chicken on the 18.5" WSM (((Pic Heavy)))


 
Keep an eye on deal sites such as woot for headlamps. Last week they had a 2 pack for $10. My headlamp has become an invaluable tool when doing overnight cooks.


~~~Wanted to give Mike a shout out for this suggestion. Although it's been a while since this thread, after I read what Mike said about the headlamp, I remembered I had one in a closet and never used it. I put batteries in it and have been using it weekly ever since, as we cook outdoors on the Webers several times a week minimum

Speaking of cooking on Webers, I used my 22" Performer Gold to do the Thanksgiving bird ala Jamie's Weber video (Applewood brine/smoke). What an awesome recipe! the bird was the best ever

I've been looking at the PBC and really like the looks and method of cooking. I'm going to get one of the expandable smoking racks for my 18"wsm too. Can't wait to hang some ribs. I've done ribs w/o the water pan in place and like the results of that. Next time i do a pork butt I'm going to do it w/o the water pan too. Whole cook PBC style.

Barb and I did the same recipe for our Thanksgiving bird and it was great!
I've also done high heat chicken cooks without the water pan on the 18.5 at 325 or so with excellent results. As Dwain stated take a full chimney of lit and dump on a chimney of unlit and it will stay at 325-350 for hours with no problem at all.
Thanks for sharing the info on the rack, will have to look into that.
 
Jake, thanks for your post, you just saved me about $200, I was on the verge of getting a PBC. The Weber rack is the way I'm going, along with the hooks you mentioned, Good test and report.
