First cook on the Mini WSM!

Hi all, I just joined the forum last week and want to share with you some pics of the recent cooks I did. As some you may know, I just built a mini WSM that got completed last week after a rocky start due to a damage in transit tamale pot :(, link to my build post:

Now that I have it made, last Wednesday I christened it with a small pork shoulder joint and a few chicken tights just to see what kind of temperature range I would get and what kind of charcoal efficiency I would get.

I didn't want to overfill the charcoal bowl so took it easy and started with not too much coal, but I think I need to use more going forward since I had the refill on coal twice during the day( also I was only using lump wood ,I might try some briquettes next time).

Pork went in at 10.30 am and came out around 8pm (after having spent the last 3 hours of cooking tightly foiled), pics below. that was easy the juiciest, tastiest and smokiest pulled pork I have done so far, next time I'll smoke a bigger piece of meat since this one was just over 2.2lb  just enough for 2 dinners. The meat pulled like butter! Sorry no pics of the platted resut but it was getting late and we were too hungry to take pictures :D

just before going in at 10.30am:

coming out in the evening:

Nice smoke ring to it:

Pulled like a dream:

Jules that is some awesome looking pork shoulder. Going to make some gooooood eats for sure.

thanks all, it was awesome, definitely the best tasting PP I've done to date, only regret is I should have bought 2 joints of meat as it was only 2.2lb, so with the shrinkage from the cook and the weight of the skin, fat and bone, there was just enough for 2 meals for Management and I, next time I'll sure double the quantity!
