Thanks fellas. Curt the ribs were fall off the bone which I know for some people is over done but we thought they were great. Butt pulled right apart and smoke was good on both. this was with apple wood. My second cook was with hickory and that got a little bitter for my liking. I don't have pics of that one
 
Curt I just realized maybe you meant foil not foul. If so I did foil the ribs. Used the 3 2 1 method. I didn't touch the butt at all during the cook
 
My wife loves fall off the bone ribs so that's how I cook them. I love apple wood. It isn't too strong. If I go hickory I mix with apple, cherry, or peach and go very light. Good luck on the brisket I have done one and need to do another soon.
