First Cook - Hung Baby Backs in the 14.5

I made a stacker and a hanging rack for the 14.5.

This was a first cook doing hanging ribs (SYD on one & Memphis Dust on the other): Minion method w/ brickets 2 deep, 4 small pieces of apple wood in the charcoal ring & Weber mini chimney 3/4 full. The cooker was assembled and the meat added immediately after dumping the lit coals in the charcoal chamber.

The cook started at 4:00 pm & the target temp was 320*. By 4:30 I had 327* and maintained those temp (plus or minus) for the next 2 hours. I sprayed the ribs with a 50/50 mix of apple juice & apple cider vinegar at 6:00 and 6:20. I had one brief temp spike to 3:46* shortly after the first spritz.

I removed the ribs at 6:30 to sauce them. The racks broke apart. End of cook!!! So I lightly painted them with a thin vinegary sauce, covered them with foil & let them rest for 15 minutes.

This was a first run. Next time I'll drop the temp to 290* & see how that goes.


fwiw - the ribs were good. They weren't dry, but they were not like a low & slow, either. The cooker consumed less than 2/3 of the fuel.

I'd sure like to see other items in that picture for scale----the picture with the ribs almost flame kissed makes it seem smaller than I think it is
 
I always enjoy viewing pics of ribs hanging in the smoker. Those baby backs look mighty tasty from here!
