First catering gig!

Howdy folks...thought I'd throw this post up now they I'm recovered a bit!!

This was a long process but was well with it!! Started off early in the week with making several batches of No 5 sauce and lots of rub!

Started with 4 8 lb boneless pork shoulders at Costco at 59 cents a pound! Could not beat that and I had very little to trim! Used the Chris Lilly rub and injection found on the home page...

Got a 8 lb brisket too...rubbed with Willeys no1 from smoke and spice (and managed to use actual paprika this time)

Started up the smoker about 830 Thursday nite...used apple for this cook!

Then back up 0430 to check things and add brisket!

Some how I managed to shoe horn all almost 40 lbs of meat on!! To continue......
 
So the weather had been really pretty nice in Juneau the last few day!! Mid to high 60's and sunny! Actually it hit 70 Friday about noon! But it was chilly still in the morning...when I was up checking the butts it was only 32! WSM held steady at 225 ish all nite and got almost 6 hours of sleep!

Any way both dogs said it was too early and hung by the heater!

So the pork went 16 hours at 225 ish and I started actually ramping thing up to about 260 the last few hours of the cook as I was worried the brisket wound not get thru the stall! Pork came out at 230 pm and foiled and rested!

Then I got a call the party moved up in time..foiled the brisket for an hour.. Pulled all the pork(didn't get any shots of that unfortunately since I was hurrying!) packed the pork in big metal disposable trays, grabbed the brisket and it had just started getting tender...pulled and rested for a few and sliced!

And unfortunately that was it...wasn't our party so we didn't go but I know they served beans and tater salad...rolls and the BBQ sauce...I got a report some time later that the meat was perfect...they were going to make burgers and dogs but decided not too since the meat was a big hit!!
Any way fun cook...long process but was way worth it!!! Oh I got paid with a 10 inch wustoff chef's knife and paring knife set and a nice bottle of bourbon which was enjoyed last nite!!

Nice work Morgan!! Looks like you did good. Now get some rest because you now need to cook something for Mrs. Morgan on Sunday...

WOW Morgan!!! This is a great post. A lot of work but a great way to become the owner of quality knives and a dab good drink;). Thanks for sharing.
 
Thanks folks for the great response!! I was just happy it all turned out good and was enjoyed...no plans to do this commercial at all!! I just like to help folks out if I can!!

Beautiful job Morgan. Very cool. didn't know you catered. I've got a birthday coming up; head on over to Jersey and do a repeat performance for me!
