First Brisket

I bought a 14lb Costco Prime packer and figured I would give it a shot. I put it on last night about 9pm. I got up a few times to check and it was running a little hotter than I wanted. Most of the cook was up in the 280 range but I wrapped it when IT was mid 160s and took it off this morning after about 8.5 hours. I rested it in cooler for 4 hours and now I am slowly reheating for lunch. The taste test as I sliced it was pretty awesome. I am pretty happy with it for my first one. I definitely could use some practice on trimming and slicing.


Side note, tried the weber charcoal for first time and its still running around 225 out there after 15+ hours. Super impressed with that charcoal!

Andy, that looks great! Looks very juicy. Did you get good bark, too? Might be the pictures, but that's a lot less dark than any of my briskets have ever been (mine look like meteorites. What did you rub it with?

The bark was definitely a little less than I was expecting. I only used S & P. There was one small spot of pooling on the top since I had to kind of wedge it to fit on the 18. Next time I will put some wood chunks under that I have ready about to help with that. I may have wrapped it a little early since that is when I happened to wake up at 2am and it by temp it seemed time. Definitely a learning experience!
