First Beef Short Ribs

I see the pix all over instagram, figured id try my hand at beef short ribs..

A few of them came out a little under, should have just cooked them all to about 205, but i was scared of going over, but a couple over wouldnt have been bad for a sunday dinner. i tried to sneak them in just under then wrap and let them finish cooking as they sat. Dont over think it, just cook it till its butter tender and have a great meal. :)

but overall i really enjoyed the cook. they hit the grill at around 9am, over post oak at about 265*. The weather is finally under 95, so i sat outside most of the day watching the Ryder Cup and enjoying oak smoke.

Looks great! I got burned a while back with some less-than-meaty beef back ribs, but have not tried short ribs yet. I think I need to remedy that.

turns out i had never seen short ribs and had to ask the butcher. looks NOTHING like that before cooking. Im expanding my horizons :).. I say do it Chad, much easier cook than brisket.

Rusty those short ribs look delicious. Like Rich said wish we could fine some around here.
