Nice cook....Care to share how you made that bacon candy?
Trimmed some fat off of a 5lb slab of pork belly. Dry brined with kosher salt the night before. Cut it into ~ 2" cubes, drizzled a little olive oil on them and coated them with some Memphis dust & some mustard based store-bought rub.
Smoked low for 5 hrs, put them in an aluminum pan, coated them in a sweet store bought sauce mixed with catsup, brown sugar, honey, more rub & a splash of vinegar, covered with foil and let it go for another hour.
