Trimmed some fat off of a 5lb slab of pork belly. Dry brined with kosher salt the night before. Cut it into ~ 2" cubes, drizzled a little olive oil on them and coated them with some Memphis dust & some mustard based store-bought rub.Nice cook....Care to share how you made that bacon candy?
