Finish in oven?

New member
Friend of mine at work will take his shoulders off the smoker after 5-7 hours (when its got smoke flavor) and finish them in the oven. Anyone else do this? I've never tasted his pulled pork so I can't compare it to mine and see if its similar.
 
I work with a guy that does this ALL THE TIME.... only four hours on his "homemade" smoker then in the oven.

I have not tasted his cooking either...
 
I dunno....it's like these out out here that smoke salmon that way....I'm not on board with it.
Personally, I don't think they trust their smoker/BBQ system and resort to finishing in the oven.

I might do it to "fix" a smoke but I don't plan to do it.
 
That sounds like using TWO crutches to me....but who hasn't ovened at some point?

Yep, once foiled heat is heat and the meat doesn't care if it's outdoors or indoors. I'll do it in the winter when I don't feel like dealing with the temps, and it warms up the house and smells great! :wsm:

I do NOT do it on a regular basis, but have done it when I got caught by bad weather. The results are the same. After the smoke, as Tim says, heat is heat...

Awesome. I agree with "heat is heat" but I also feel like I am cheating. However, if it saves me half a bag of charcoal on a 15+ hour cook (25 lbs of shoulder) then I find it more acceptable.
 
I had some rain during a cook last winter, but my wife told me SHE needed the oven, and I had to "be a man and deal with it."

So I did... the umbrella was the one she keeps in HER car of course...
 
I used to do that out of necessity when I had my brinkmann bullet....just because I couldn't count on it to maintain heat for long enough. I usually got 5 or 6 hours of smoke and then I'd pop it in the oven at 350 or so to bring it to temp. Now that I have mt WSM , I don't do that , but in a pinch I'd say it's a legit tactic.
 
I'm lucky I have a sheltered back patio. And I built a wind shield for the WSM. I've smoked in -20 with -40 windchill. It was pretty ok. I just burned through a ton of charcoal.

even today , with my WSM , I like to make it easy on myself...I'm not going to keep adding charcoal ..if I find the outside conditions are too extreme to let me finish in the smoker? The heck with it. I'll bring it in the house ...as my brother the "Texas smoker know it all"
always says... " if it's got the color , it's got the smoke" ... Don't be afraid to change your game plan...
