Finally got some beef ribs!

Now i just need to find an afternoon and figure out how to cook them. I saw racks at the store and picked up two. They were meaty, choice grade, five bone racks (2.6 lbs each) and just over $5 each. Since I can't cook them this weekend, I froze them after cutting each rack in half because they were too big for the freezer bags I have.

Any recommendations on how to cook them? I was thinking just a salt/pepper rub and smoking at 250 with pecan wood. I was also planning on a 5-6 hour cook. I've seen many methods on here, if you have anything tried and true do tell!
 
You're gonna LOVE these! I cook them just like St Louis cut pork spare ribs (3-2-1). I like them so much I eat them with dry rub and no sauce.
 
I love beef ribs. Rub. Smoke at 325f for 1hr 15 min. Foil for 1h 15min. Then back on the smoker for 30min.

I would season with salt and pepper only. Don't forget to post your cook..

i've had pretty good results with salt and pepper at 225- 250 for about 4 hours. No wrap necessary in my experience. although i do foil and rest for about an hour.
 
Kosher salt, cracked plack pepper, onion and garlic powder. 2-2-1 method at 250 works for me. Enjoy.
 
Ethan, if you can find some Stubb's Beef Marinade, this stuff is pretty good. Marinate overnight or a few hours.
or your thinking of a simple salt and pepper is great too!
the beef ribs i've cooked were done in the 4 to 5 hour at 250 to 275º without foiling.
how ever way you cook them, make sure you use a drippan under them.
