Fathers Day Tri Tip

Found a local source at the farmers market today that had 30 day dry aged beef. No hormones, grass fed,etc, and good prices on tri tip. Grabbed a tip and some green beans and yellow zuke. Grilled the tip with a Santa Maria rub over some pecan.

I trimmed about 1/3 lb of fat. Here it is after I was done.

Grilled indirect, then took it off for a breather while I cranked up the heat.

On for a sear while my new grill pan heats up.

Plated. This was cooked to 130F, but was the reddest beef I've ever had. The flavor was just outstanding. The prices from this local farm were more than reasonable. In fact, some cuts are less expensive than the chain grocery stores nearby. I hope everyone had a great Fathers Day.

Looks delicious. Still don't grasp the 'grass-fed' selling point, though. Corn silage is grass. I like my beef to be corn fed.
