We aren’t going to under season today…..
Beef is ready waiting for the chicken to finish, thinking just over an hour on the beef…..pork still has close to 2 hours left.
Pork is now working on close to 2 hours, holding good temps.

Currently covered and getting soft.
Butter, brown sugar, honey and a splash of apple juice.
hour and a bit till tender then I am glazing and setting that glaze for about 5 minutes.
Picanha is at 300 with peach and looking for about 115 for a sear and then a rest.
Dinner is gonna be a hit.
Horsey sauce, au jus, just maintaining my best son and best son in law status.
That is a real thing when you have to compete.

No final plate pics, sorry, I usually get those, company I guess……
Everything came out at @bout 100%…big win with the parents……
The picanha was the best one I have put together ever, pork belly was fatty as expected but the fat is softer than cotton candy…big win.
Thanks for checking it out.
