Failed attempt at smoking cauliflower.

I saw a recipe somewhere online and figured why not. I nuked it for a couple of minutes as suggested so it wouldn't take as long to cook but it was still a little to hard after about 3 hours at 275 degrees. So back into the microwave for a few more minutes with butter on top. It was softer but the bbq seasoning after smoking and microwaving tasted off. Better luck next time, I hope.

I've smoked cauliflower successfully. I've always broken it down into florets, and found that it works best to par-cook (steaming, usually,) about halfway, then smoke at 225-250 for 30 minutes or until done. A light sauce of 50/50 mayo & source cream dressed up with a curry mix completes it. I should point out that I get no caramelization on mine at all, just a little smoke characteristic.
 
I did Cauliflower steaks on the EX6 two years ago at 275° and they cooked through. Here's part of my cook log.

Finishing and serving: Kung Pao sauce on one steak. Olive Oil, Garlic, Brown Sugar, Lemon Juice, Paprike, Salt and pepper on other steak. Serving with Chicken Salad.

Finished product: Cooked through, tasted like Cauliflower but I had to add sauce at the table to taste the sauce.

Next time: Do florets in the basket.
