Not quite what you were expecting, right?

I thought Bisquick pancake batter would be a good idea - nope!

10 minutes was a little too long: (was eating)

I ate the good ones & threw some onion slices & some crumbs into a simple salad - that was the best part of the meal :)

Here is the recipe you requested for the onion rings. Enjoy

BEER BATTERED ONION RINGS

2 large onions peeled about 1 ½ pounds
2/3 cup all purpose flour
½ teaspoon salt
¼ teaspoon paprika or a little more if you like
¼ teaspoon freshly ground black pepper
1/3 to 1/2 cup flat beer I used New Castle Beer
1 large egg lightly beaten
1 inch vegetable oil or more as needed to pan for frying

Cut the onion into ¾ inch thick slices, and separate into rings. I used the large and med. size rings and save the rest for other uses. I soak them in cold water for about 20 to 30 minutes then I pat dry on towel before putting into batter. Spoon flour into a dry measuring cup and then add salt, paprika, and pepper in a medium bowl. I start with 1/3 cup beer and egg, batter will be thick then I add the rest of the beer. Heat the oil in a large nonstick skillet over medium-high heat. Dip onion rings in batter a few at a time, before putting in oil let the excess drip off. Add onion rings to pan, cook for about 2 minutes on each side or until golden. Place onion rings on a paper towel line jelly roll pan. Repeat procedure of dipping onion rings in batter and cooking in remaining oil. I cover my pan with foil as I’m cooking the rings to keep them warm. If you wish you can put them in the oven on low heat. Enjoy with you favorite dipping sauce.
