I wanted to do a chuck roast for this but I've also been wanting to try this with hamburger....and that's what won today.
Next time I think I might try filling the tortillas with ~5 shrimp each, roasted pepper, and a white cheese,,,,,, covered with a green sauce.
flattened out a pound of ground chuck with a little taco seasoning on it
cooked it for a few minutes per side
and then into a pan with 3/4 of an onion, some fresh cilantro, and a couple of minced jalapenos
I put some unmashed "refried" beans that I made yesterday in the small gap in the middle
wrapped the bottom of the cake pan with foil
I used an 8 oz package of western family mexican blend cheese - next time I think I'll use something better.
