Empanadas and donuts

After using half of this rotisserie chicken for al king

Yesterday morning ( before pretzels and pizza) I took the other half of the chicken and made this filling.

And then I made th empanadas to store in the fridge until tonight for an easy dinner after a longer than normal day at work. These were the he three without cheese.

After a hot bath in the oil and a rest in the hot oven.

Then since it is fat Tuesday and the oil was already hot we went to a classic from my childhood.
Get the cheapest store brand 4 pack biscuits you can find, punch out the centers and fry up some great "homemade" donuts and donut holes.

Nothing fancy, just sugar or powder sugar.

Man between those donuts and the chicken al king on Sunday it tastes like my childhood!

Oh and don't forget the donut holes!

I love the donut hack!
Let alone the judicious use of all that chicken.
The donut hacks goes back into my childhood and has become a staple of my kiddos food memories as well. They are much better enjoyed hot. I keep wanting to make true homemade donuts from scratch and my kiddos are like nope, you can all kinds of stuff dad, but leave our donuts alone, don't mess with them. When I brought the tubes of dough home the other day, the kids were made because they thought I wasn't going to make homemade biscuits for the al king, when they realizes they were for donuts thier attitudes changes.
 
That’s really cool, they are the last thing my doctor would want me to have but, I might just have to try doing them for the fun, I going to have to find my biscuit cutters to punch the holes or figure something out.
