Time for some wild game, and what better piece of meat to do then the back loin? Got a mule deer last year, real nice buck!

Here's the loin rubbed down with some Montreal Steak Seasoning.

On the Performer we go with some hickory ready to smoke, all vents wide open and let'er ride.

About 50min later, about 160 on the inside, and...

Put it on direct for a little sear, and basted with some butter seasoned with Byron's Butt Rub and minced garlic.

Let it rest for 20-30min and sliced.
