mixed together then rolled out 1.7lb ground chuck and 1.1lb ground pork

seasoned the deal with Penzey's California Seasoned Pepper

had only 5 slices of bacon thawed so I fried those up

afterwards, I sautéed some thin sliced shallots with sliced Shiitake mushrooms

bacon down...

shallots & mushrooms atop that...

then rolled up and seasoned with Blues Hog Rub

stuck a probe in the meat, tossed it on the Weber grill....

...then sat back and relaxed with Two Women.

ain't too sure how long it took to come to temp (155ºF), but I did glaze it with Blues Hog Tennessee Red

Excellent, and I agree some cheese would round that out nicely. A fine job indeed. The sight of that New Glarus actually made me salivate a little bit. I gotta get up to WI soon and pick up some Spotted Cow! :)

Their Fat Squirrel, Snowshoe and Stag Horn (Oktoberfest) are great as well!
 
That looks great Jim, maybe cheese would perk it up a bit but a great start for sure.
The folks that live across the street from us spend the winters here and in the summer go back to their cabin in Wisconsin. They always bring back some great beers from there.
