This is from last Friday when I was "working from home" and had an urge for ribs for dinner.
Cheap local butchers - Barry's Meat Market in Forest Gate, London E7. £12.27 for the pair.
Looked OK but not as meaty as all the U.S. ribs. I put this down to Barry and his cheaper meat and our restrictions in the use of growth hormones.
Not much time for trimming and used a retail (Waitrose) fire and spice rub.
Used Weber Briqs, a few sticks of Big K restaurant grade lump and 2 chunks of apple and cherry.
Got a very steady temp 238f-255f with only one bottom vent open a crack. Quite pleased with temp control but it has leaks.
Did a 3-2-1 and one rack feel apart and the other just about held together.
Another lazy option (I was "working" after all) was to use Paul Newman sticky sauce.
Epic slab fail.
Overall my best, most tasty ribs so far, despite the lack of depth of meat. I don't really care that one slab fell apart but will go 2 - 2 - 45mins next time.
