Cold Smoke?

Hi Lynn and welcome!

It is possible but I've not tried it. There's some great threads here on smoking cheese at cold smoke temps.

Going to be very hard to keep temps at cold smoke unless you’re ventilating the kettle. What are you cold smoking?

When I was googling for cold smoking, I stumbled over several german contraptions. People cold smoking in large cardboard boxes, or wrapping the legs of their kettle, and letting the cold smoke draw through the intake.

You can cold smoke in cardboard apparently, but I am hesitant to recommend it due to fire safety.

you need enough volume to keep everything below ~75F. That's where you have to be creative.

Can Weber Kettle be used for Cold Smoking?
Anyone ever used a Smoke Daddy smoke generator?

If I were using a smoke daddy with a kettle, I think I'd mount it to something away from the kettle and rig some flex tube to get the smoke into the kettle. The thing with the smoke daddy is it gets really, really hot because there's coal burning at the bottom and I can't think of an easy way to mount it to a kettle.

When replaced my home water heater they replaced the flex tubing and I kept the old one. I might try to adapt this to use on my WSK.

Some other comments specific to the smoke daddy.

I would not say I've mastered it. I should probably spend some more time using it.

What I found:
good lump like oak or Jealous Devil works best as the initial fuel and make sure the lump is really going well before adding the smoke wood
Wood Chips or Wood Chunks work well.
Pellets did not work well for me. too much thick white smoke and hard to control

The heat from the smoke daddy raised the pit temp of my BGE about 10 degrees over time. I suppose I could put an bowl of ice in the bottom to keep temps down if I wanted.

I’ve used my kettle with a smoke tube several times and it worked good enough .
Hot summer sun can spike the temperatures.
My wsm 18 with a smoke tube in the bottom works better yet.

I think smoke daddy is about the best I’ve currently seen.
If I got one I’d upgrade to a rechargeable pump so I don’t have to deal with extension cords.
I have some parts to cobble a homemade smoke daddy together but still am trying to figure out how not to burn my place down.
Some of the diy vids are not thought out that well.
