Cold Rain Sleet Snow ... So what to do?

Fire up the WSM of course!

I had a slab curing this week so it was time to smoke it.

Here's the bacon drying last night. And as long as I was making smoke, I figured I'd throw in a couple of other things. I checked the freezer and found some chicken that wasn't doing anything else so I brined that then let it dry overnight as well.


And I threw together a meatloaf:

The bacon is done and is cooling. Bumping up the temps and about to put the rest in.

Hmmm. Chicken or meatloaf for dinner?

First Update Hot off the smoker:

We won't be eating for a while (wife is working), but here is the chicken and the meatloaf:

The brine I used is a premix my folks gave me - lots of herb and some fruit. I made up a glaze with honey and OJ plus some Tones Citrus Grill.

It's going to be hard to resist this tonight. There were a few bits stuck to the pan so it was my DUTY and RESPONSIBILITY to taste them. Very good!
