Did this a few days ago for Cinco de Mayo. I was actually born in Puebla, Mexico, which is pretty much the only place in Mexico that celebrates the holiday. It commemorates the Mexican victory over the French at the Battle of Puebla in 1862.
Enough with the history lesson!
I rubbed a skirt steak in chipotle powder, cumin, salt (lots), pepper and a touch of brown sugar.
While that was resting I put some red and yellow onion, jalapeno, red peppers and a poblano in the grill pan to char.
Once those got almost to where I wanted them, I moved the veggies over to the indirect side. I dropped some apple wood chunks on the fire and got them burning hot, and put the skirt steak over them to take a quick sear. Only took about a 90 seconds per side.
Once I pulled the steak it was tortilla time.
Here's what it looked like on the plate. I made the salsa a day before by charring roma tomatoes, red onion, jalapenos and serranos on the grill and then blending with some cilantro, lime juice and plenty of salt.
Finally, the wife made some homemade sopapillas. Becuase who doesn't like dough deep fried with sugar and honey.
