Cider-Brined Pork Chops

I was feeling like pork chops for dinner, so I tossed a couple of thick-cut chops in some brine before leaving for work this morning. The brine consisted of water, local apple cider, kosher salt, maple syrup, and cracked black peppercorns.


A shot of the pork chops in the brine, which were then rubbed with some oil & Pimenton (thanks go out to our own Bill Schultz for reminding me how good smoked Spanish paprika is). The brine consisted of water, local apple cider, salt, maple syrup, and cracked black peppercorns.



I'm really starting to like this cold weather grilling thing - truth be told, I'd rather be a little chilly than all sweaty and mosquito-bitten. It wasn't quite Wisconsin-cold, but it wasn't exactly t-shirt & shorts weather. The cook was done on the Weber Spirit gasser.

EXCELLENT Chops Jerome! + lemme tellya, the extreme cold is gone for now, it's currently 29ºF with tiny flakes fallin' in SE'ern Wisconsin...
and i'd trade all the tanktop & flipflop days for one of those beauties you grilled up....
