My son had his Christmas get together for his gym at a local craft brewery on Saturday, breslaubrewingcompany.com. He asked Joanne and I to smoke some appetizers for about 40 people. We prepped as much as possible at home then took the 22" WSM's on the road, set up in the parking lot out back around 3:00 pm. We did 12 lbs of jumbo shrimp, 40 lbs of chicken wings and 18 lbs of pork belly burnt ends. The butcher cut the ribs and skin off for me, need to find a recipe for cracklin's now !! Everything went off as planned and we were on our way home by 11:00 pm. We had to go back and pick up the smokers Sunday morning.
