Hi All,
I "captured" my wife’s “cough cold”, this thing is rampant in Florida right now. I don't think it's a cold. This might be what the CDC calls RSV, whatever. It’s bad. How bad? You cough for a minimum of two weeks.
Anyway, I opened one of my presents early. Chuck Simon did an impressive post with the Weber Wok and I was already adding the Gourmet Grates to my Performer so I dove right in and got it. Tonight I tried it for the first time. It is outstanding!! Completely non-stick, although I did season it in the oven before using it even though it is porcelain enameled.
I also got the Weber wood paddles as Weber says metal utensils are a no-no. They have a winner here. I’ve used steel woks for years and this one beats all of them by a light year! It retains heat so well there is no comparison. Everything I threw in it just sizzled and kept doing it. Cleanup was a breeze.
I’ve been sick and so without any research I decided to use the same “Bill Schultz” Yakitori marinade adding more Teriyaki to make a chicken breast and broccoli stir fry. It turned out absolutely delicious.
So here are the pics. Sorry, no plated pics. We have a lot of other things going on in the kitchen this time of year and the girls kicked me out! We did plate on top of Jasmine rice.
The Wok on the grill warming up. I used two baskets of Kingsford comp and dumped them on the bottom grate:
Strangely, after about ten minutes the lid thermometer only indicated 350 degrees but the wok was sizzling! Throw some water droplets on it like I did. That tells the story. I then added the carrots and sliced broccoli stems:
Once those were stir fried a bit I added the florets:
Once they were all happy I took them off to a side dish and added the chicken. Incredible how quick they got a sear, and I've done this for years:
Everyone back in the pool with a ladle of Bill's reduced sauce and quickly off the grill - daylight was gone so the flash came on using the indirect reflector:
And just for information, this is how hot the coals were when I took the wok off the grill after I was done cooking - hot is good for stir fry
:
I am so impressed with this Weber offering!! I love stir fry and this is the best I have used outside ever!!
Merry Christmas ALL!
