hook line and sinker!!! the chicken worked!

can I cook chicken in the wsm? looking for a 2 to 3 hour cook! or can you guys sugest any other meats that require a 3 hour cook! I have done a 6 & 12 hour cook!
reason I ask, have a mate coming over and he wants to see a demo run of the Wsm! and if I was to do a 12 hour cook, that would cost me 2 cartons of beer! and we proberly would forget about the wsm cooking!!!

so if I got a heap of chicken wings! would be good in 3hours? and a piece of Hickory for flavour

Most assuredly! When I do wings I usually smoke them at 250 until they seem almost done....then I take out the water pan , let the fire get nice n hot and drop the wings down on the bottom rack (skin side down) and crisp them up real quick. This has worked pretty well for me. This is usually accomplished in around 3 hours....
 
I did a whole chicken today in 2 hours running 300-325 degrees. After a brine last night ---- simply awesome.
 
IF doing just a slab of ribs, I always throw on a bag of chicken breasts to smoke and then eat them during the week, make great sandwiches sliced in half (after cooking) to thin them..........or, eat them with the ribs........................d
 
all done, turned out good but could of done with an extra 15min cooking time! it was a big chook that I cut up. the thermapen was spot on, but a few bones did not pull out of the meat with ease! I did cook on the top rack. should I of cooked on the bottom rack?

went to my mates place to watch the footy, last night! and what is sitting under his verandah? a new in the box WSM! the chicken must of worked
