Chicken Two Ways

We were both hungry for chicken but couldn't decide how to make it. I wanted grilled and Erin wanted something poached. So we compromised.

Here's my half (a breast, thigh, both wings and the liver), drizzled with EVOO and seasoned with KS&P and thyme.

And on the grill indirect along with some brined baked potatoes.

Off the grill they were drizzled with some more EVOO, fresh lemon juice and some crushed red pepper (another Donald Link recipe). Plated with some steamed broccoli.

And mine with some homemade jalapeno sauce.

Erin’s half. The back, other breast, legs, the wing tip that I remembered to cut off (along with a dozen from the freezer from wing nights) and the other thigh were cooked down and shredded. Added to this was sautéed pepper and onion along with tomatillo salsa and a bunch of Penzeys Adobo.

I think both ways look pretty darn good! But that grilled chicken is making my mouth water. Forgive my ignorance, but what is the K in KS&P? I can't seem to figure it out.
 
Jon, keep the liver, i'll eet everything else:)
