Chicken Tacos - Meatwave Recipe

I read a whole lot of Meatwave.com, but rarely try their recipes. Since I am back into using my kettle and been wanting some chicken tacos, I am trying their take on a Weber's chicken taco recipe.

Most the marinade ingredients were at home, but I needed some chicken thighs (I splurged on "organic") and some oregano - went with the small spice packets found Latin American markets here in L.A. Are these also available in other parts of the use? I love being able to pay .99 for a spice I might not use all that much. Sure beats the pricey spices I saw at William Sonoma last week with my wife.

The marinade got mixed up in a bowl, and included one of my favorite Mexican brews - Negra Modelo. I remember the first time I drank it in the garage of my childhood apartment with my neighbors. We used to do that a lot down here, you would have a few blocks of apartments with garages and guys would hang out drink beer, fix cars, etc...

Once the marinade got all mixed, I poured it over the chicken thighs in a gallon ziplock. Off it went into the refrigerator, and I will grill it up tomorrow.

Kept suggesting to my wife she make some horchata to drink with our tacos tonight. I went to work a few hours this morning, came back and I saw my wife was not home but she had started on the horchata.

I went down to the local High School, which was having a fundraiser. Their botany club sells started plants. I walked away with a San Marzano tomato plant and a jalapeno plant.

The chicken had marinated for about 15 hours and I pulled it out.

While I started the kettle, I served myself some chips and salsa (my wife made the salsa earlier in the week).

We had some fresh pinto beans which my wife made the night before, so it was time to refry them.

My wife put the finishing touches on the horchata, while I grilled the chicken.

Final thoughts... I over marinated, making the chicken thighs too juicy. Definitely will use the marinade again, but maybe for 2 or 3 hours before the cook-out. I like my taco meet a little dryer.
 
Ricardo I think that is the best post I have read in a while. Keep them coming. Great looking food and the story was just as good. Nice job!
