I read a whole lot of Meatwave.com, but rarely try their recipes. Since I am back into using my kettle and been wanting some chicken tacos, I am trying their take on a Weber's chicken taco recipe.
Most the marinade ingredients were at home, but I needed some chicken thighs (I splurged on "organic") and some oregano - went with the small spice packets found Latin American markets here in L.A. Are these also available in other parts of the use? I love being able to pay .99 for a spice I might not use all that much. Sure beats the pricey spices I saw at William Sonoma last week with my wife.
The marinade got mixed up in a bowl, and included one of my favorite Mexican brews - Negra Modelo. I remember the first time I drank it in the garage of my childhood apartment with my neighbors. We used to do that a lot down here, you would have a few blocks of apartments with garages and guys would hang out drink beer, fix cars, etc...
Once the marinade got all mixed, I poured it over the chicken thighs in a gallon ziplock. Off it went into the refrigerator, and I will grill it up tomorrow.
