Wet brined overnight with 1/3 cup kosher and 1/3 cup Evan Williams to a gallon of water. Patted dry, applied rub mostly under the skin and then dried on a rack 4 hours in the fridge.
Taters are an appetizer, have a bunch of veggies that will roast in the oven.
Made up some Alabama white sauce (normally I squeeze a lemon but this time I just have limes and it turned out great)
