So, while the wife and kids and I were on vacation a few weeks ago we visited the local farmers market. There was a guy there selling his BBQ rub. He was cooking chicken, peppers, peaches, etc. on a smokey joe for samples. The rub was pretty good so I bought a couple of bags. I mean, he was cooking on a Weber, right? On the back of the bag was his recipe for "Chicken on a stick." Yesterday I gave the recipe a try. Ok, I didn't follow it exactly, but somewhat.
Started with B/S thighs cut in half. Marinated in a mixture of "Ivan of the Ozarks BBQ rub" (link here: http://www.bbqrub.us/) and buttermilk for 2 days. Then threaded chicken onto skewers and sprinkled with a little more of the rub. Then brushed chicken w/oil and grilled.
First some sides,
Russets
Russets + Sweet corn
Corn direct for a couple of minutes
Chicken
Plated w/ garden fresh tomatoes
Some pretty good stuff. Next time I'll add more rub after removing from the marinade though. May skewer them in more flat pieces too so that the chicken cooks more evenly. A recipe worth doing again.
