Chicken Mole

Chicken thighs grilled to about 165 internal seasoned with a light coating of Lawry's Seasoning salt and Black pepper.


Made a mole sauce out of this paste and a 26 oz box of unsalted chicken broth and a pinch of salt.


Took the skin off of the thighs and gave them a bath in the mole sauce while the rice cooker was going.


Served over white rice and pinto beans. Yum, one of my favorite meals.
 
I really like that one. A little market/liquor store used to carry this brand and I used to use it all of the time. The place was sold and was turned into just a liquor store and they stopped carrying it. I go to another little market now and they carry it and some other things I have a hard time finding. Since finding it again, its the only brand I have used.
 
If I ever see that container in a liquor store...I'm gonna be buying more than one + whatever I came to the liquor store for in the first place! Nice lookin' meal, John.
 
Looks great John - Was the mole super spicy? We've bought a few in the tubs before, can't remember if we've tried your brand, but it was *way* too spicy for me -
