Chicken mango stir fry!

Evening folks...well I am not much of a stir fry cook or super fanatic over Asian food...but my wife picked up some Costco seasonings so I though we'd give em a fry!!

Started with some chicken thighs..cut up and added some of this mango chilli sauce and Asian seasoning!
All the players up...veggies were just mushroom, sweet onion, sweet pepper and some canned water chestnuts!

Got everything prepped and got the dogs busy!

Got some coals going(not sure why I didn't start the coals prior to prepping...oh wait..gott a have some drinking time!)

Dumped the chicken in a clean bowl and threw the veggies in!(welding gloves required)

Ran those for a few and dumped them in with the chicken...added some more sauce...served up with rice and beer!

Wow good stuff...wish I had some egg rolls or fried wontons...but other than that...super tasty!

Great looking meal!!! The good thing about stir frys is anything goes, its a good way of cleaning out the fridge.

Great cook! I may just have to investigate a "grill wok" myself, after seeing yours in action.

We did stirfry a bit different, tonight. I had smoked some legs and thighs and nearly always do more than we'll use for that meal, looking ahead for a couple of days. These thighs were HUGE (regular "Thunder Thighs"). My wife took some of the left overs and cut the meat from the bones and stir fried them on the kitchen range. She does a GREAT stir fry, so we ate well tonight, again! Nothing like grilled or smoked chicken (wonder how the poor people were doing tonight {anyone not here or at Morgan's can be considered "poor":rolleyes:}).

Thanks Dale...that cracked me up...my ole man use to say the same thing when I was a kid and we were anchored up in some bay eating fresh fish we had caught for the day" wonder what the poor folks are doing tonight"...which was funny cause in them days we were pretty poor but rich in fun and family!
