Chicken Breast

Hello BBQ and Grilling buddies!!!!
Today was a good day....


Did some chicken breast a little differnent today.. Cut up my veggies.


Did a sear on both sides and used some jack daniels wood chips.




While my chciken was cooking I had a pan with my veggies and water.


Once I got the color I wanted I put them in the pan and covered with foil and left it alone for 45 min.


All done and it smelled amazing!!


Plated with white rice. Chicken was moist and delicious.

The chicken breasts look amazing and reminded me of some that I cooked last week when I made smothered chicken. I cooked a lot of extra breasts and had enough leftovers for two extra meals. I thinly sliced enough to use to make fajitas the next nighht, and I chopped the remainder (2 cups) and put in the freezer for a future meal (enchiladas? or pot pie? etc).
